What is the difference between raster clip and extract by mask?

Clip only does a rectangular area (envelope) however extract by mask will extract to an irregular/multipart/doughnut polygon. If you want only the data in an extent use clip, it’s much faster, but if you need to trim to an irregular shape then use extract by mask.
 

What is the difference between clip raster and extract by mask in Arcgis pro?

The Clip Raster tool is bit different from the the Extract by Mask tool. The Clip Raster tool cuts out a portion of a raster dataset (extent changes) while Extract by Mask tool does not change the extent of the raster but converts values outside of the clip feature/raster to NoData.
